Brazil Cerredo Pulped Natural

These beans come from Cerrado Mineiro, a region in the largest coffee producer in the world: Brazil. When you want to sell cheap, deliciously nutty coffees, this is where you source from.

Although nutty tastes have always been popular, we have avoided Brazillian beans due to the impact the coffee trade has had on the rainforests. Today, while deforestation persists, there has been progress. Enough so, that we think it is ok to start offering beans from the farms in this region. Politics and attitudes toward the environment change fast however, so watch this space.

So besides a minimized environmental impact, what else does this coffee offer? Well, if you love your coffee nutty then this is the holy grail. This pulped, natural coffee expresses the purest character that put Brazil on the map. Our Roaster's Choice offers a well balanced caramel / toasted walnut flavours, followed by a pure, sweet finish.

A “Greatest Hits” of Ethiopia Blend

Named after the 100k long MacLehose trail, we aimed for a blend that is complex, elegant and that can be enjoyed every morning without becoming dull.

To achieve this, we focused on Ethiopian single origin beans. These coffees are widely considered to be the best you can buy. They are famously floral, fruity and require delicate a preparation to bring out their best attributes. 

The MacLehose celebrates all the tastes that make Ethiopian coffees great. We added intensely floral beans with a character found through out the region. We mixed in beans that exhibit a very berry, fruity character to give it sweetness. Finally we added some slightly darker roasts to add a honeyed depth.

The result is a blend that is far more complex than it’s individual parts. Like walking through a field of honeysuckle, while snacking on plums. The layers of sweetness makes this a cup you will keep coming back to.

Inspired by the famous Hong Kong Trail of the same name, the Wilson is an exceptionally nutty, chocolatey blend from Yunnan, Honduras and Uganda.

Very low acidity, smooth and full-bodied.

Yeast Fermented, Ethiopia

A special, delicate coffee developed through experimentation.

This coffee process was a bet that paid off in flavor!

Let me introduce you to this very special, experimental batch of coffee. Here the beans were inoculated with yeast as part of the production process. There was a very high risk of failure here as introducing any living creature inherently comes with risk. If they had failed, the result would have been the total loss of their annual yield.

Instead this brave group of Ethiopian farmers successfully double ferment their beans (first with yeast, followed by a second lactic acid fermentation) resulting in a very unique taste. We begged them to tell us but we don't know what kind of yeast they used. Was it bread? beer? champagne? sake? a San Francisco sour dough starter??!? Such a missed marketing opportunity.

Anyway if you love fermented coffee, this is the one's for you!

El Perezoso, Costa Rica - Limited Quantity

El Perezo refers to one of the small hills in Costa Rica, but the name of this hill means "the Sloth", hence our cute packaging design. There are more than 2,000 micro-lot farmers growing coffee in this region and this coffee is from one of them, called Coopro Naranjo.

A Brief tour of the Kinu M47 Classic

The hopper is a pleasure to fill, with an extra-wide opening that prevents you from spilling beans everywhere.

This manual coffee grinder is stepless, meaning you can take your coffee OCD to new heights by fine-tuning your grind sizes at a precision of 1/100th of a mm. If you feel your pour-over brew is just slightly too heavy or doesn’t exhibit enough floral notes, just give the dial a fraction of a turn and set your own grind size.

Turning whole bean coffee into perfectly uniform particles is also effortless. The with each rotation, even the flabbiest of arms can split high-altitude hard coffee beans 50 times. The innovative thumb stopper prevents slippage, no rubber grip needed.

The coffee basin of the Kinu Classic is held in place by powerful of magnets, coming off and re-attaching with a satisfying click. No more dusting screw threads of coffee dust. Just pull, dump, and re-attach.

Just look at those beautiful magnets. But so, so heavy.

The only downside to the Kinu Classic is if your ambitions for the perfect coffee pour over requires travel. At a hefty 1.85 kilos, this is not a piece of equipment you want to be dragging around airports. For frequent fliers, we would recommend the Kinu Pheonix, which trades the heavy steel for lighter plastic parts without sacrificing quality.

Worka Chelechele, Ethiopia

Worka is a region in Gedeb, just west of Kochere and north of Yirgacheffe. This coffee was grown on a farm called Chelechele, which is blessed with fertile red soil and protected by shady trees. These beans are hand sorted and lightly fermented naturally with clean running water. The result is a clean, fruity, tea-like coffee that makes a very beautiful light roast.

Your coffee journey starts here.

The Curious One is an introductory coffee grinder that will help you dive deeper into specialty coffee. It’s a grinder that is best for French-press, pour-over or cold-brew style coffees. I wouldn’t use it for anything that needs fine, precise grinds like espresso, Turkish or Mokka. For that you will need a serious, stepless grinder.

How to setup your coffee grinder

Unscrew the bottom of the grinder. Inside is a circular disk with numbers showing the grind settings.

  1. 1. Rotate right, toward the fine setting until it stops
  2. 2. Rotate back left, toward coarse, until you hit 1
  3. 3. Your grinder is calibrated

Brew ratios

For the best results, I would recommend a kitchen scale. The brewing method outlined below is based on the fantastic James Hoffman V60 method and brew ratios.

  • 1. Start with 15g of coffee for every 250ml of boiling water
  • 2. Grind your beans and add it to your brewer
  • 3. For pour-over or french-press, add 50mm of hot water and let your coffee “bloom” (if your coffee is fresh you’ll see bubbles form)
  • 4. Gently pour in the rest of your 200ml of hot water
  • 5. Taste the coffee, refer to our “Dialing it in” guide below to fine-tune your brew

Dialing it in

The coffee is not very good

Too bitter or too strong
Use a coarser grind size and use more water

Very sour
Use a finer grind size and use less water

Watery / thin tasting
Use a finer grind and use more coffee

The coffee is good but could be better

The coffee is very rich / thick / heavy
<- Go left one or two clicks coarser

Grinder care

Your grinder does not need to be washed or cleaned. 

If you think that’s gross, that’s OK! Clean your grinder by gently tapping it on the side or buy a (new!) paint brush and dust your grinder with it. Do NOT wash it. You’ll remove the grease that keeps the movements smooth. 

Do NOT store ground coffee inside the grinder. Air will quickly make your coffee bitter and sour.

The Curious One comes in recyclable packaging. The grinder itself is made of wood and easy to recycle aluminum and stainless steel. If you manage to wear the burrs out or damage the grinder such that it is no longer useable you can toss it into your metal recycling bin.

Warranty

Your Curious One grinder comes with a 5 year warranty in Hong Kong. Just send us your old grinder with a note on what is wrong with it and we will either replace the broken part or the entire unit.
